Midweek Express #4

Pasta with Prawns and Lemon

I love this. I make different variations of this all the time. Some times with prawns sometimes with just bacon or good ham. This takes only 15 minutes to make so it's perfect for a midweek meal.

  • 250 grams peeled raw prawns

  • 200 grams of spaghetti

  • 1 small onion. diced

  • 2 cloves of garlic, crushed

  • Juice and zest of one lemon

  • Handful of fresh chopped parsley

  • olive oil

  • chilli (optional)

  1. Cook the pasta as instructed on the packet

  2. Meanwhile in a pan, heat the olive oil

  3. Saute the onions and garlic till translucent

  4. Add the prawns and cook till just pink

  5. Add the cooked pasta with a little of the cooking water

  6. Toss around till mixed

  7. Add the Lemon juice and zest

  8. Sprinkle the parsley and give it a quick toss

  9. Turn off the heat before the parsley cooks too much

  10. Serve.
