Thai Fried Rice With Pork

Tonight for dinner we had this very tasty Thai dish. It's a simple all-in-one dish. I got the recipe from one of my cook books Entrée to Asia by Thomas Robson. I've made this dish many times before. If you don't have snowpeas, you can use any green vegetables. I've also used shredded cabbage which was just as good. It's best served with a very runny egg on top.

  • vegetable oil

  • 300g lean minced pork

  • 1/2 cup sliced snow peas

  • 2 cups cooked rice

  • 4 eggs

  • salt

  • pepper

  • sugar

  • 2 cloves minced garlic

  • 2 tbs fish sauce

  1. In a work, heat oil.

  2. Then fry garlic.

  3. When garlic browns, added minced pork.

  4. When cooked through and brown, add snow peas and fry until they turn bright green.

  5. Add fish sauce & pepper.

  6. Meanwhile, heat oil in frying pan.

  7. Add rice to the wok and stir-fry. Once it's warmed-through adjust seasoning by adding salt, sugar, fish sauce and/or pepper as desired.

  8. Remove wok from heat but keep warm.

  9. Fry eggs in frying-pan sunny-side up.

  10. Plate the rice and top with fried eggs.

  11. Serve with cucumber slices.
