Pandan Coconut Muffins

My hubby says that I'm obsessed with all things pandan. I have to say that it's so true. I don't know what it is about it, maybe the flavour or the memories it brings back every time I smell or taste it.


I saw this recipe from one of the blogs I read who in turn got from her favourite blog. I automatically thought "I have to bake this" and I did... eventually. I was very surprised to see how simple the recipe was. It was just a matter of mixing all the ingredients together in a bowl and bake.

However, the pandan and coconut is not strong enough to taste so it rather tasted like a normal vanilla muffin. Having said that though, it was still quite delicious and was crunchy on the top and nice and moist in the middle. The little one loved it.

Oooooh pandan! Looking at your gorgeous muffins I was reminded of a fantastic dessert I had at Gingerboy - steamed pandan dumplings with palm sugar syrup. Yummmmm! :)

oohhh... steamed pandan dumplings! sounds so delish. I have to try that one day.
