Midweek Express

Corned Beef Hash.

Now that I work funny hours and my job is quite physical (not like the good ol' days at ANZ), I try to cook meals during the week that are quick and easy, but of course not compromising on the taste and flavour.

For a real quick meal sauté in a pan 1 can of corned beef (Hamper brand), garlic, onions and diced potatoes. Serve with either a poached or fried egg on top. How simple can that be? You can modify as you please by adding different herbs and if you like, spices to give it that exotic flavour.
