Bubble N Squeak

Bubble and Squeak is a traditional English dish using left over vegetables from the night before. The dish was named after the sound it makes when cooking. It's typically made with potatoes and cabbage and is commonly eaten on a Monday since the leftovers were used from the Sunday Roast dinner.

For me, when I decided to make this, it was Thursday and I didn't have any left over vegetables. I did however have veggies I wanted to use up in the fridge, so I just cooked them all from scratch. I made mash potatoes and sautéed the cabbage and onions in olive oil before combining them with other vegetables as you will see in the recipe below. It's usually served as one large disc (size of a frying pan) but I like to serve them in small individual servings. I served them with a few rashes of good crispy streaky bacon but you can go totally vegetarian and serve it with salad.
  • 1/4 head of cabbage, shredded

  • 1 onion, chopped

  • 2 medium potatoes, peeled and chopped

  • 2 cups of mixed vegetables (e.g. carrots, broccoli, cauliflower, corn, peas, celery and/or beans)

  • 1 egg

  • olive oil

  • 8 rashers of streaky bacon (optional)

  1. Boil the potatoes until cooked. When ready mash them and leave aside.

  2. In a pan sauté the cabbage and onion till tender and caramelised. Meanwhile boil the other vegetables then gently mash with a fork.

  3. When all the vegetables are cooked, place in a large bowl and combine.

  4. Add the egg and mix with a fork.

  5. Ladle a couple of spoonfuls of mixture into a pan of hot olive oil. Cook until nice and golden brown.

  6. Serve with fried streaky bacon.

Unfortunately the one cafe that I know has it was near my home in Brisbane. (They used sweet potato and it was sooooo tasty!)

BUT I just did a search of the breakfast blog, and he lists Birdman Eating (Fitzroy) and Turtle Cafe (Elwood) as having bubble and squeak. Race you there! :D
