The Cook Book Challenge - Week 3 : Hor d'oeuvres (a catch up)




Since I was having my Annual Christmas Cocktail Party, I thought this would be a great opportunity to catch up on week 3 of the challenge :


Week 3 : Hor d'oeuvres
Recipe : Spinach, feta and tomato triangles
Cook Book : Party! Simple and delicious party food




I've had something similar before but thought I 'd try this one.  Not being a big fan of feta, I changed it to ricotta instead and it tasted delicious and moorish.  These are perfect for cocktail parties.  I made them in the morning of the party and kept them covered in the refrigerator until needed.

Recipe:
2 tbls olive oil
2 tbls chopped spring onion
115g fresh spinach, washed and shredded
salt and pepper
2 sheets filo pastry
115g feta cheese, crumbed
6 sun-dried tomatoes, chopped finely
115g butter, melted

Preheat the oven to 200degC.  Heat the oil in a pan over a medium heat and cook tthe spring onions for 2-3 minutes.  Add the spinach, increase the heat to high aand cook, stirring constantlty, for 2-3 minutes.  Remove from the heat and drain in a sieve.  Chop coarsely, season to taste and leave to cool.

Cut each sheet of pastry into 6 strips.  Place a spoonful of spinach at the bottom of each strip.  Scatter cheese and tomatoes on top.  Fold the bottom right-hand corner of each strip up to meet the opposite side to form a triangle.  Fold the triangle towards the top of the strip and rrepeat until you reach the top of the strip.

Brush the edges of each triangle with melted butter, then transfer to a greased baking tray.  Brush the top of the parcel with more butter.  Place the baking tray in the oven and bake for 10 minutes, or until the pastry is golden and crispy.  Remove from the oven and serve at once.  Alternatively, cool the triangles on a wire rack and serve warm or cold.

I much prefer ricotta to feta, too. I can see how great it would be in these triangles. And baked not fried - winner!
