Suman

My mum loves to cook, I guess that's where I get my love of food from. Recently she made Suman.



It is a Filipino sweet dish. It's sticky rice wrapped in banana leaves and left to steam for an hour or so. To be honest, I don't know how to make these. If I want some, I just ask my mum to make them for me : ) As it's steamed in the banana leaf, the sticky rice is taken on the aroma of the leaf. It can be served with a various sauces or sides. Here it is served with grated fresh coconut.

Only had my first sticky rice recently at China Town in Sydney and loved it!

adski, No, it's not a secret :) I asked my mum and it sounds easy actually tho it takes a while so make sure you have a few hours up your sleeve. My mum likes to make these in large batches so this recipe makes about 20-30 sumans depending on how big you make them. Take 1kg of glutinous rice and wash it thoroughly. Drain and dry well. Then add 1 tbl of Lye water. Now wrap about 1 1/2 tbl of the rice in the banana leaf and roll it like you would a spring roll. To tie them up you can use kitchen string. My mum uses the straw-like bag of the rice which she has pulled apart. Place them in a large pot and submerge them in water and let it simmer for about 4-5 hours, topping up the water to keep the suman covered.
